Did you know you can eat radish greens? The leaves can be a bit coarse, so wilt them with salt a little before tossing and serving. Chop into small pieces, sprinkle with salt, and layer between two bowls while you assemble the rest of the salad.
Radish Salad
1 bunch radishes and their greens
Spinach or lettuce
1/4 c. raisins
1/3 c. olive oil
2 Tbs. vinegar
Salt and ground pepper
After preparing radish greens, slice radishes into half rounds. Toss with raisins. Add lettuce or spinach and wilted radish greens. Prepare vinaigrette and dress salad before serving. This salad tastes even better the second day after the dressing has been absorbed.
